Field and Pasture – 2025
Since opening in 2004, dinners at Blue Hill at Stone Barns have included a Field and Pasture guide—a journal with notes from chefs and farmers, farm maps, and detailed information on the food being served. We wanted to refresh the format and reimagine what Field and Pasture could be beyond a booklet. I collaborated with the Blue Hill team, farmers, chefs, and dining staff to create a new system: a folder of cards customized to each guest’s meal, so no two guests receive the same set. The cards highlight seasonal produce, farm practices, and butchery research, creating an engaging, educational experience guests can take home.
